Crispy Roast Pork Belly in Phoenix, AZ

I adored this authentic, crispy Chinese roast pork belly. Can't get it at just any Chinese restaurant in Arizona, but the stuff here at Diamonds is awesome. Do you have a favorite authentic Chinese dish, and can you find it locally?
Make sure the skin is crispy and crunchy and NOT tough either. That means it's fresh! A lot of times, if you're in Chinatown, you'll see these slabs of roast pork belly hanging next to the window. Those are the good stuff!
